Here's each state's rule:

Maine: Overnight Parking in Rest Areas is Prohibited
New Hampshire: Overnight Parking in Rest Areas is Prohibited
Massachusetts: Overnight Parking in Rest Areas is Allowed Unless Posted
Rhode Island: Overnight Parking in Rest Areas is Allowed Unless Posted
Connecticut: Overnight Parking in Rest Areas is Allowed Unless Posted
New York: Overnight Parking in Rest Areas is Allowed (Emergency Only)
New Jersey: Overnight Parking in Rest Areas is Allowed Unless Posted
Delaware: Overnight Parking in Rest Areas Allowed Where Posted
Maryland: Overnight Parking in Rest Areas is Allowed Unless Posted
Virginia: Overnight Parking in Rest Areas is Allowed Unless Posted
North Carolina: Overnight Parking in Rest Areas is Prohibited
South Carolina: Overnight Parking in Rest Areas is Prohibited
Georgia: Overnight Parking in Rest Areas is Prohibited
Florida: Overnight Parking in Rest Areas is Prohibited

The key word here is "overnight". It's common to see tractor trailers and RVs parked in rest area lots during the night. Stopping for two or three hours to catch some sleep is certainly not "overnight". If you do decide to park, choose a well lit area with plenty of activity.
